Making sure your family eats enough fruit can be as simple (and delicious) as adding to classic after-school snacks like quesadillas. The sweet, buttery texture of the Organic Bartlett pears and the crunchy Organic Honeycrisp apples blend great with smoky meats and melty cheese. When testing this recipe with the Superfresh team, we couldn’t decide between ham or bacon. The bacon brought out the apple and pear notes, but the ham was comfort food and familiar. So… we put both in the recipe. If your family is like our families, then it’s easier to sub whatever you have available in the fridge anyway!
Ingredients
- 1 Organic Honeycrisp apple
- 1 Organic Bartlett pear
- 4 slices of smoked ham or bacon
- 1 cup shredded cheddar cheese
- 4 10-inch raw flour tortillas
Directions
Cook the four tortillas per package instructions in a skillet. Set aside. Thinly slice apple and pear. Dice ham or bacon into small pieces and set aside.
Sprinkle ¼ cup cheese evenly across one tortilla. Place apple pear slices in a circle, alternating between the two, creating a light, even cover. Sprinkle 2 slices of diced ham over cheese and fruit, and add another ¼ cup cheese. Place the second tortilla on top and cook in a skillet on medium heat. Cover for 30 seconds to help the cheese melt. Flip the tortilla with a spatula, and cook covered for another 30 seconds. Continue flipping until the cheese is thoroughly melted. Repeat for the second quesadilla.
