Vegan Applesauce Pancakes

These small-batch applesauce pancakes make it easy to whip up a quick breakfast or snack for your kiddo. Homemade applesauce made with Autumn Glory apple can be made in advance and adds a special layer of flavor you don't get with regular pancakes. Nutmeg and cinnamon are the perfect complementary spices to finish out this yummy recipe!

Autumn Glory applesauce (can be made in advance)

  • 1 Autumn Glory apple
  • Sprinkle of nutmeg and cinnamon

Pancakes

  • All-purpose or chickpea flour
  • 1½ tablespoons coconut sugar
  • 1½ teaspoon baking powder
  • Pinch of sea salt
  • Sprinkle of nutmeg and cinnamon
  • Almond milk
  • Dash of vanilla extract

Directions

To make apple sauce, begin by peeling and chopping an Autumn Glory apple into small pieces. Place apple pieces in a frying pan or nonstick skillet and sprinkle with nutmeg and cinnamon.

Cook over the stove in a small amount of water until tender and most of the water evaporates. Mash apples with a fork or blend until smooth.

Pancakes

Combine all dry ingredients in a medium-sized bowl (flour, coconut sugar, baking powder, sea salt, nutmeg, and cinnamon).

Add 2 tablespoons of applesauce, almond milk, and vanilla extract. Mix together.

Place small dollops of batter in a frying pan over medium heat, flipping halfway through when reaching desired darkness. Feel free to get creative with shapes here!

Top with slices of Autumn Glory, blueberries, or other fresh toppings.
