Vegan Applesauce Pancakes

These apple pancakes use homemade applesauce to create a soft texture with a light hint of warm spices. As the pancakes cook, they develop a tender interior with lightly golden edges, making them a reliable option for breakfast or brunch. Ingredients

Autumn Glory applesauce (can be made in advance)

  • 1 Autumn Glory apple
  • Sprinkle of nutmeg and cinnamon

Pancakes

  • All-purpose or chickpea flour
  • 1½ tablespoons coconut sugar
  • 1½ teaspoon baking powder
  • Pinch of sea salt
  • Sprinkle of nutmeg and cinnamon
  • Almond milk
  • Dash of vanilla extract

Directions

  1. To make apple sauce, begin by peeling and chopping an Autumn Glory apple into small pieces. Place apple pieces in a frying pan or nonstick skillet and sprinkle with nutmeg and cinnamon.
  2. Cook over the stove in a small amount of water until tender and most of the water evaporates. Mash apples with a fork or blend until smooth.

  4. Combine all dry ingredients in a medium-sized bowl (flour, coconut sugar, baking powder, sea salt, nutmeg, and cinnamon).
  5. Add 2 tablespoons of applesauce, almond milk, and vanilla extract. Mix together.
  6. Place small dollops of batter in a frying pan over medium heat, flipping halfway through when reaching the desired darkness. Feel free to get creative with shapes here!
  7. Top with slices of Autumn Glory, blueberries, or other fresh toppings.
