Ingredients
Chicken tacos
- 1 ¼ lb. ground chicken
- ½ teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon diced scallions
- Street taco-sized tortillas
- Butter
Pear slaw
- 1 D'Anjou pear, julienned
- 1 cup shredded red cabbage
- 1 cup red arugula
- ½ lemon juice
- 1 tablespoon roasted garlic Japanese BBQ sauce
- 2 tablespoons plain Greek yogurt
Directions
- Stir together all of the slaw ingredients and set aside.
- In a medium mixing bowl, combine the ground chicken, ginger, minced garlic, scallions, Worcestershire sauce, salt, and pepper, mixing until evenly distributed.
- Add two tablespoons of the chicken mixture to a tortilla and spread it evenly, leaving it close to the edge.
- In a pan, add butter, and set it to medium heat.
- Press the meat side of the tortilla down onto the pan and cook for 3 minutes.
- Flip the tortilla to the other side and cook for approximately 2 minutes, until it turns golden brown.
- Remove the taco from the heat and add a dollop of the pear slaw.
- Repeat the process until all of your chicken is gone.
- Serve.
