Fall Harvest Chicken Salad Stuffed Sweet Potatoes

Yield: 2-4 servings

These chicken salad stuffed sweet potatoes combine tender roasted sweet potatoes with chicken, crisp Autumn Glory® apples, dried cranberries, and crunchy pecans. A creamy Greek yogurt Dijon dressing brings everything together with a touch of honey and fresh lemon juice. The apples add sweetness and crunch, balancing the savory chicken and tangy dressing. With protein from chicken and Greek yogurt, plus fiber from sweet potatoes and apples, this fall recipe makes a satisfying lunch or dinner. Each batch makes four stuffed sweet potato halves, serving two to four people!
