Autumn Glory Apple Panzanella Salad

Meet your new fall salad obsession! A cozy, rustic dish that celebrates the sweet and caramel-like flavors of Autumn Glory® apples. Each bite balances freshness and comfort, with crisp apple slices bringing brightness to warm, toasty textures. It's the kind of salad that feels both light and hearty, perfect for cozy gatherings, Sunday dinners, or any time you want to bring a taste of autumn to the table.

Ingredients 

Salad 

  • 2 Autumn Glory® apples, cored and sliced into 8 wedges each
  • 1 large red onion, thinly sliced using a 1 mm mandolin
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • 8 cups rustic bread
  • ½ cup Castelvetrano olives, pitted and sliced in half
  • 2 tablespoons fresh thyme leaves 

Apple cider vinaigrette 

  • ¼ cup apple cider vinegar
  • ¼ cup extra virgin olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground black pepper 

Sweet Autumn Glory® apples bring in a burst of fall flavors to this rustic salad, perfectly balanced with cozy flavors and savory notes.

Directions 

  1. In a large skillet, over medium-high heat, pour in the olive oil, aged balsamic vinegar, and sliced onions. Cook and stir until the onions begin to wilt. Then reduce the heat to medium and continue cooking until they are soft, golden, sticky, and caramelized.
  2. Set the oinions aside for them to cool down.
  3. In a small mixing bowl, whisk all the ingredients for the apple cider vinaigrette together.
  4. In a large mixing bowl, add the bread, apples, olives, caramelized onions, and thyme. Toss it all together until the onions are well distributed.
  5. Pour the apple cider vinaigrette over the salad and toss it once again.
  6. Taste for seasoning and add salt and pepper if needed.
  7. Let the salad rest for 20 minutes until the bread has softened.
  8. Serve.
