Ingredients 

Salad

  • 15 oz white beans, drained, rinsed, and dried
  • 15 oz chickpeas, drained, rinsed, and dried
  • 1 cup mini cucumbers, halved and thinly sliced
  • 1 cup cherry tomatoes, quartered
  • 1 Autumn Glory® apple, thinly sliced
  • ¼ cup red onion, thinly sliced
  • 3 tbsp fresh dill, finely chopped
  • 3 tbsp fresh mint, finely chopped
  • ½ cup fresh parsley, finely chopped
  • ½ tsp salt
  • ⅛ tsp black pepper
  • ¼ cup crumbled feta
  • 1 serving Lemon Dressing 

Lemon Dressing 

  • 1 tbsp lemon zest, loosely packed
  • 3 tbsp fresh lemon juice
  • ¼ cup extra virgin olive oil
  • ¼ tsp fresh ground black pepper
  • ½ tsp fine salt
  • 1 tsp agave nectar
  • 1 tsp Dijon mustard

Directions 

  1. In a large bowl, add all the salad ingredients, along with salt and pepper. Toss to combine.
  2. In a small jar, whisk together the ingredients for the lemon dressing.
  3. Pour the dressing over the salad and gently toss until everything is evenly coated.
  4. Taste and adjust the salt and pepper to your taste.
  5. Sprinkle the feta cheese on top.
  6. Serve immediately.
