Ingredients
Salad
- 15 oz white beans, drained, rinsed, and dried
- 15 oz chickpeas, drained, rinsed, and dried
- 1 cup mini cucumbers, halved and thinly sliced
- 1 cup cherry tomatoes, quartered
- 1 Autumn Glory® apple, thinly sliced
- ¼ cup red onion, thinly sliced
- 3 tbsp fresh dill, finely chopped
- 3 tbsp fresh mint, finely chopped
- ½ cup fresh parsley, finely chopped
- ½ tsp salt
- ⅛ tsp black pepper
- ¼ cup crumbled feta
- 1 serving Lemon Dressing
Lemon Dressing
- 1 tbsp lemon zest, loosely packed
- 3 tbsp fresh lemon juice
- ¼ cup extra virgin olive oil
- ¼ tsp fresh ground black pepper
- ½ tsp fine salt
- 1 tsp agave nectar
- 1 tsp Dijon mustard
Directions
- In a large bowl, add all the salad ingredients, along with salt and pepper. Toss to combine.
- In a small jar, whisk together the ingredients for the lemon dressing.
- Pour the dressing over the salad and gently toss until everything is evenly coated.
- Taste and adjust the salt and pepper to your taste.
- Sprinkle the feta cheese on top.
- Serve immediately.
