  • 1 tablespoon salted butter, melted
  • 1 ½ tablespoons almond milk

  • ½ tablespoon blueberry reduction, see above

These blueberry donuts are soft, fluffy, and bursting with real natural blueberry flavors.

Directions

  1. Preheat the oven to 375° F and grease a 6-cup donut pan.
  2. To make the blueberry reduction for the icing, add the blueberries and sugar to a small pot over low heat.
  3. Mash the blueberries with a fork and simmer for 10-15 minutes, stirring occasionally, until thickened and reduced.
  4. Let the reduction cool while you make the donuts.
  5. In a large bowl, whisk together the flour, sugar, baking powder, nutmeg, and salt until the mixture is well combined. Make a well in the center.
  6. Melt the butter in a small bowl or glass measuring cup, then whisk in the yogurt, milk, and lemon extract.
  7. Pour the wet mixture into the dry ingredients and mix until well combined. Then, fold in the blueberries.
  8. Transfer the batter to a piping bag and pipe it into the pan.
  9. Bake for 12-15 minutes, or until the donuts are lightly golden and spring back when touched.
  10. Transfer them to a wire rack to cool completely.
  11. Mix the icing ingredients in a small bowl.
  12. Dip the donuts into the icing and let them set on the rack for 15-20 minutes.
  13. Serve.
  14. ENJOY!
