Ingredients
Blueberry Reduction
- ½ cup fresh Superfresh Growers' blueberries
- 1 teaspoon sugar
Blueberry Donuts
- 1 ¼ cup all-purpose flour
- ½ cup granulated sugar
- 1 ¼ teaspoon baking powder
- ¼ teaspoon fine salt
- Pinch of grounded nutmeg
- ¼ cup salted butter, melted
- ¼ cup unsweetened yogurt
- ½ cup almond milk
- ½ teaspoon lemon extract
- ½ cup fresh Superfresh Growers' blueberries
Blueberry Icing
- 1 cup powdered sugar
- 1 tablespoon salted butter, melted
- 1 ½ tablespoons almond milk
- ¼ teaspoon lemon extract
- ½ tablespoon blueberry reduction, see above
These baked blueberry donuts are made with fresh blueberries and finished with a lemon blueberry icing.
Directions
- Preheat the oven to 375° F and grease a 6-cup donut pan.
- To make the blueberry reduction for the icing, add the blueberries and sugar to a small pot over low heat.
- Mash the blueberries with a fork and simmer for 10-15 minutes, stirring occasionally, until thickened and reduced.
- Let the reduction cool while you make the donuts.
- In a large bowl, whisk together the flour, sugar, baking powder, nutmeg, and salt until well combined. Make a well in the center.
- Melt the butter in a small bowl or glass measuring cup, then whisk in the yogurt, milk, and lemon extract.
- Pour the wet mixture into the dry ingredients and mix until well combined. Then, fold in the blueberries.
- Transfer the batter to a piping bag and pipe it into the pan.
- Bake for 12-15 minutes, or until the donuts are lightly golden and spring back when touched.
- Transfer them to a wire rack to cool completely.
- Mix the icing ingredients in a small bowl.
- Dip the donuts into the icing and let them set on the rack for 15-20 minutes.
- Serve.
