Balsamic Cherry Braised Chicken

These balsamic cherry chicken thighs are a rich, flavor-packed dish that perfectly balances savory and sweet. Juicy chicken is seared and roasted with fresh cherries, rosemary, and a tangy balsamic glaze, creating a bold and aromatic sauce. Easy to prepare in one pan, this recipe is ideal for weeknight dinners while still feeling elevated enough for special occasions.

Ingredients

  • 4–5 chicken thighs, skin on
  • 4 cups cherries, pitted
  • ½ cup balsamic glaze
  • ¼ cup extra virgin olive oil
  • 3 sprigs of rosemary
  • ½ cup water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder

Directions

  1. In a bowl, mix balsamic, olive oil, salt, pepper, onion powder, and diced rosemary leaves from one rosemary sprig.
  2. Add chicken thighs to the bowl or freezer bag and completely cover each thigh.
  3. Let chicken thighs marinate for at least 30 minutes.
  4. Preheat oven to 400°F.
  5. In a skillet, heat about 2 teaspoons of oil of choice.
  6. Once the skillet is hot, add the chicken thighs, skin-side down, so they are not touching.
  7. Flip each thigh after about 4 minutes, and cook for another 3 minutes.
  8. Add cherries to the skillet, surrounding the chicken thighs, and top with the remaining balsamic marinade.
  9. Add 2 sprigs of rosemary to the top of the cherries.
  10. Place a cover over the skillet, then put it in the oven for 15 minutes.
  11. After 15 minutes, remove the lid and cook for another 10 minutes.
  12. Take it out of the oven and serve it immediately. Serves well with yellow rice.
