Arugula, Gemelli, & Rainier Cherry Salad

Ingredients

Vinaigrette

  • 1 cup Superfresh Growers Rainier cherries, halved with stems and pits removed
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon minced onion
  • ½ teaspoon garlic powder
  • 2 tablespoons water

Salad

  • 2 cups fresh baby arugula
  • 2 cups cooked gemelli pasta, drained and cooled
  • ¼ cup crumbled feta cheese
  • ¼ cup shaved parmesan
  • 2 tablespoons olive oil
  • ½ cup Superfresh Growers Rainier cherries, halved
  • ¼ cup toasted pine nuts or sliced almonds
  • Rainier Cherry Balsamic Vinaigrette

Directions

For the vinaigrette

  1. Place halved cherries in a small saucepan and cook over medium heat for 8 to 10 minutes until soft and bubbly.
  2. Remove from the heat and cool slightly.
  3. Place cherries and all other ingredients but water in a food processor or blender. Blend for 1 minute until smooth.
  4. Add water to your food processor and pulse until combined.

For the Salad

  1. Combine all ingredients in a bowl. Drizzle vinaigrette over top. Toss gently to combine and serve!⁣
