A fresh salad with a light vinaigrette is the epitome of summer recipes! This recipe is half green salad, half pasta salad, for the best of both worlds. Superfresh Rainier cherries tossed in round out this recipe as the perfect hot weather meal.
Ingredients
Vinaigrette
- 1 cup Superfresh Growers Rainier cherries, halved with stems and pits removed
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon minced onion
- ½ teaspoon garlic powder
- 2 tablespoons water
Salad
- 2 cups fresh baby arugula
- 2 cups cooked gemelli pasta, drained and cooled
- ¼ cup crumbled feta cheese
- ¼ cup shaved parmesan
- 2 tablespoons olive oil
- ½ cup Superfresh Growers Rainier cherries, halved
- ¼ cup toasted pine nuts or sliced almonds
- Rainier Cherry Balsamic Vinaigrette
Directions
For the vinaigrette
- Place halved cherries in a small saucepan and cook over medium heat for 8 to 10 minutes until soft and bubbly.
- Remove from the heat and cool slightly.
- Place cherries and all other ingredients but water in a food processor or blender. Blend for 1 minute until smooth.
- Add water to your food processor and pulse until combined.
For the Salad
- Combine all ingredients in a bowl. Drizzle vinaigrette over top. Toss gently to combine and serve!
