This fresh apple Greek cake is a soft, buttery dessert made with thinly sliced Autumn Glory® apples and a simple cinnamon sugar topping. Ingredients
- 4 Autumn Glory® apples, peeled & sliced
- 2 tablespoons butter
- ¼ cup lemon juice
- ¾ cup softened salted butter
- 1 cup white sugar
- 1 ½ teaspoons vanilla extract
- 2 eggs
- 1 ¼ cup all-purpose flour
- 1 teaspoon baking powder
- ¼ cup milk
- ¼ cup salted butter
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- Icing sugar or vanilla cream for serving
Directions
- Preheat oven to 320 °F
- Prepare a 10-inch springform pan by greasing it with one tablespoon of butter and dusting it with flour.
- Peel, core, and thinly slice the Autumn Glory apples.
- Add them to a bowl and pour ¼ cup of lemon juice.
- Toss them until fully coated.
- Mix the all-purpose flour and baking powder in a small bowl and set aside.
- In another mixing bowl, use a hand mixer to beat the ¾ cup of softened butter, white sugar, and 1 ½ teaspoons of vanilla extract until they are light and fluffy.
- Add in the eggs and beat at medium speed until combined.
- Add the all-purpose flour and baking powder mixture to this same bowl and beat at medium speed until fully incorporated.
- Finally, add in the milk and beat until combined. The batter will thicken.
- Add the batter to the prepared baking dish.
- Add ¼ cup butter, ¼ cup brown sugar, and 1 teaspoon cinnamon to a small pan and warm over medium heat.
- Stir until the sugar dissolves and remove.
- Drain the lemon juice from the apples, then gently arrange them on top of the dough in the baking dish, pressing them into the batter.
- Drizzle the melted butter-brown sugar-cinnamon mixture over the apples.
- Bake the cake for 40-50 minutes or until golden brown.
- Cool the cake for 10-15 minutes before removing from the pan.
- Sprinkle the top of the cake with icing sugar.
