Autumn Glory Apple Churro Rings

These apple churro rings with puff pastry are a fun, easy dessert made with fresh Autumn Glory apples, cinnamon sugar, and flaky pastry. As they bake, the puff pastry turns golden and crisp while the apples soften, creating a perfect balance of texture and sweetness. Coated in a churro-style spice blend and finished with a hint of vanilla, these apple rings are simple to make and full of flavor. Ingredients

  • 2 Autumn Glory apples
  • 2 sheets of puff pastry
  • 1 lemon, juiced
  • 1 egg
  • Cold water in a bowl (for dipping)
  • Ice cream or whip (optional)

Churro seasoning mix

  • Cinnamon
  • Nutmeg
  • Coconut sugar (other sugar can be substituted)
  • Pinch of salt
  • 1 teaspoon vanilla extract/paste (optional)

Directions

  1. Slice your apples into circles. Core & soak them in cold water and lemon juice to avoid browning.
  2. Preheat the oven to 400°F.
  3. Prepare your churro mix in a bowl by combining the seasoning ingredients.
  4. Cut the cold puff pastry into ½- to 1-inch strips.
  5. Pat dry apple rings, then dip each slice in churro mix or sprinkle it on slices.
  6. Add to parchment-lined tray and wrap each strip around each slice as pictured.
  7. Lightly brush with egg wash.
  8. Sprinkle with more churro mix on top.
  9. Bake for 20 - 30 minutes.
  10. Let cool, and top with ice cream or whipped cream!
