Autumn Glory Apple & Brie Pumpkins

These apple brie puff pastry pumpkins are a fun, festive appetizer made with Autumn Glory® apples, creamy brie, and warm cinnamon sugar. The apples are cooked down into a soft, spiced filling, then wrapped in puff pastry and shaped into mini pumpkins before baking until golden and flaky. Finished with a sprinkle of cinnamon and a decorative stem, these bites combine sweet and savory flavors with a seasonal presentation. Perfect for fall gatherings, holidays, or entertaining, this easy recipe is both eye-catching and full of flavor.

These apple brie puff pastry pumpkins are filled with spiced Autumn Glory® apples and creamy brie, baked until golden.

Ingredients

  • 2 large Autumn Glory® apples
  • Light brown sugar
  • Ground cinnamon
  • 1 package of refrigerated puff pastry
  • Brie cheese
  • 1 egg
  • White sugar
  • Baker's twine
  • Cinnamon sticks
  • Rosemary springs (or other greens for the stem)

Directions

  1. Pre-heat oven to 350°F
  2. Line a baking sheet with parchment paper
  3. Dice the Autumn Glory® apples and transfer them to a small mixing bowl
  4. Add in brown sugar and ground cinnamon
  5. Mix until apples are thoroughly coated
  6. Add the coated apples into a skillet over medium-low heat
  7. Cook the apples until soft and fragrant; you'll have a nice saucy consistency
  8. Slightly roll out the puff pastry dough on a clean surface
  9. Cut the dough into 6 squares
  10. Add a piece of Brie cheese to each square
  11. Add a spoonful of the apple mixture on top of the Brie
  12. Fold up all sides of the square and flip over
  13. Round the ball out with your hands to resemble a pumpkin
  14. Carefully wrap your dough ball with the baker's twine to resemble the shape of a pumpkin
  15. Tie and cut any excess twine
  16. Repeat with all 6 pumpkins and set them aside
  17. Mix one egg and a bit of water in a small bowl to make the egg wash
  18. Brush the pastry balls with the egg wash
  19. Set them on the prepped baking sheet
  20. Sprinkle white sugar onto pastries
  21. Bake for 20/25 minutes or until golden
  22. Once fully baked, sprinkle a bit of cinnamon
  23. Add a cinnamon stick to the center of the pumpkin and the greenery to resemble a pumpkin stem.
  24. Serve as shown
