- ½ lemon juice
- ½ teaspoon unflavored gelatin
Apricot Matcha Latte
- 1 teaspoon Matcha tea powder
- 6 ounces of hot water
- 3 - 4 tablespoons of apricot jam
- 1 cup unsweetened almond milk

- Sauté the apricots, sugar, and lemon juice over medium heat for 10-15 minutes, stirring frequently until the fruit is softened.
- Use a hand immersion blender to puree, then stir in the gelatin.
- Let it cool completely and store in the fridge in an airtight container for up to a week.
Iced Matcha Latte
- Start by making the matcha tea by combining 1 teaspoon of sifted matcha with 6 ounces of hot water.
