Ingredients

  • 1 cup Greek yogurt
  • ⅓ cup of milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3-5 cherries, pitted & smashed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • butter

Directions

  1. In a bowl, combine the wet ingredients: yogurt, milk, egg, vanilla extract, and smashed cherries.
  2. Set aside.
  3. In a separate bowl, mix the dry ingredients.
  4. Combine the dry and wet mixtures.
  5. Melt butter in a nonstick frying pan over medium heat.
  6. Pour ¼ scoop of pancake batter and add additional cherry chunks.
  7. Cook pancake until bubbles appear. Flip and cook for another minute.
  8. Serve with more cherries and your favorite syrup.
