Apple Coffee Cake
- 1 Cosmic Crisp® apple, cored and grated
- ¾ cup packed brown sugar
- 5.3 ounces vanilla Greek yogurt
- 2 tablespoons almond milk
- 1 tablespoon apple cider vinegar
- 2 tablespoons bourbon vanilla extract
- 2 eggs
- 1 ⅓ cup flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon sea salt
Crumble Topping
- ¾ cup packed dark brown sugar
- ¾ cup flour
- 1 ½ tablespoons cinnamon
- 6 tablespoons cold salted butter
Directions
- Preheat your oven to 350 F.
- In a medium bowl, combine the grated Cosmic Crisp apple, vanilla Greek yogurt, almond milk, apple cider vinegar, and bourbon vanilla extract.
- In a separate bowl, whisk the dry ingredients. Once they're well combined, pour them into the wet mixture.
- In another bowl, combine the crumble topping ingredients, ensuring that the butter is cut through the flour mixture.
- Add parchment paper and spray oil in an 8-inch pan.
- Add half of the cake batter, then top with half of the crumble topping, and repeat.
- Bake for 55 minutes, or until a pick comes out clean.
- Let the cake cool for 45 minutes before serving.
