Cosmic Crisp Apple Coffee Cake

Ingredients 

Apple Coffee Cake

  • 1 Cosmic Crisp® apple, cored and grated
  • ¾ cup packed brown sugar
  • 5.3 ounces vanilla Greek yogurt
  • 2 tablespoons almond milk
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons bourbon vanilla extract
  • 2 eggs
  • 1 ⅓ cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon sea salt 

Crumble Topping 

  • ¾ cup packed dark brown sugar
  • ¾ cup flour
  • 1 ½ tablespoons cinnamon
  • 6 tablespoons cold salted butter 

Directions 

  1. Preheat your oven to 350 F.
  2. In a medium bowl, combine the grated Cosmic Crisp apple, vanilla Greek yogurt, almond milk, apple cider vinegar, and bourbon vanilla extract.
  3. In a separate bowl, whisk the dry ingredients. Once they're well combined, pour them into the wet mixture.
  4. In another bowl, combine the crumble topping ingredients, ensuring that the butter is cut through the flour mixture.
  5. Add parchment paper and spray oil in an 8-inch pan.
  6. Add half of the cake batter, then top with half of the crumble topping, and repeat.
  7. Bake for 55 minutes, or until a pick comes out clean.
  8. Let the cake cool for 45 minutes before serving.
