Apple & Pear Crisp with Gingerbread Cookie Crumble

Ingredients 

Apple & Pear Filling 

  • 4 Bosc pears
  • 6 Cosmic Crisp® apples
  • ⅓ cup light brown sugar
  • 1 ½ teaspoon ground cinnamon
  • 2 tablespoons orange juice
  • 3 tablespoons melted salted butter
  • 3 tablespoons cornstarch 

Gingerbread Cookie Crumble Topping

  • ½  cup softened salted butter
  • ½  cup light brown sugar
  • 3 tablespoons unsulphured molasses
  • 2 tablespoons ground cinnamon
  • 2 tablespoons ground ginger
  • ½  teaspoon ground nutmeg
  • ½  teaspoon ground cloves
  • 2 cups all-purpose flour
  • ½  cup old-fashioned oats 

 

Warm from the oven, spiced with gingerbread, and made to be shared. This apple-pear crumble is pure cozy in every bite.

Directions 

  1. Preheat your oven to 350 F.
  2. Peel and dice the pears and apples into ¼ inch cubes.
  3. In a large bowl, combine the diced fruit and all the filling ingredients. Toss until the fruit is evenly coated.
  4. Transfer the mixture to a greased 12-inch round baking dish.
  5. For the gingerbread crumble, cream the butter, sugar, molasses, and spices together in a medium bowl.
  6. Add the flour and oats, then use an electric hand mixer to beat the butter into the mixture until it is crumbly with a few large chunks.
  7. Spread the crumble evenly over the fruit.
  8. Bake for about 65 minutes or until the fruit is bubbling at the edges and the topping is golden.
  9. Let cool for 10 minutes before serving.
  10. Enjoy warm with a scoop of vanilla ice cream or whipped cream!
