Bosc Invisible Layer Cake

Ingredients 

  • 5 medium Bosc pears, mandolined
  • ⅓ cup granulated sugar
  • Zest of 1 lemon
  • 2 large eggs
  • 1 ½ tablespoons avocado oil
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt 

Directions 

  1. Preheat your oven to 350°F
  2. Begin by thinly slicing Bosc pears using a mandolin.
  3. In a medium bowl, add the granulated sugar and lemon zest, then combine until a paste forms.
  4. Add in the two eggs and whisk until well combined.
  5. Add the milk, avocado oil, vanilla extract, flour, a pinch of salt, and baking powder to the mixture, whisking until combined.
  6. Place your mandolined pear slices in the mixture and ensure they're well coated.
  7. Transfer the pear cake mixture into a parchment paper-lined bread baking pan and bake for 60 minutes.
  8. Allow the cake to cool for at least 30 minutes.
  9. Serve.
