Autumn Glory Apple Mug Cake

This Autumn Glory apple mug cake makes for a delicious, portion-controlled fall/winter treat or post-workout snack! Packed with protein, this simple and fast mug cake was designed to accompany a cold morning run (but we think it makes a pretty good treat even when you haven't left the couch).

Ingredients

  • 1 egg white from a large egg
  • 3 tablespoons plain Greek yogurt
  • 2 tablespoons unsweetened applesauce
  • 1 teaspoon vegetable or coconut oil
  • 4 teaspoons brown sugar
  • ½ teaspoon cinnamon
  • 2 tablespoons whole wheat pastry flour
  • 2 tablespoons almond flour
  • ½ teaspoon baking powder
  • ½ small Autumn Glory® apple, peeled and diced

Directions

  1. Combine the egg white, Greek yogurt, applesauce, oil, brown sugar, and cinnamon in a mug. Whisk everything together with a fork until well combined.
  2. Stir in whole wheat pastry flour, almond flour, and baking powder.
  3. Gently fold in the chopped apple.
  4. Microwave for 2 to 2 ½ minutes, or until the top of the mug cake is no longer wet. Let sit to cool for a few minutes, then dig in!

(Note – if you divided it into two servings, try microwaving for 1 to 2 minutes instead, as the cake will cook more quickly when divided).
