Ingredients

Dressing

  • ½ tablespoon spicy brown mustard
  • 1 tablespoon brown rice syrup
  • 2 tablespoons carrot juice
  • ½ tablespoon apple cider vinegar
  • 1 tablespoon tahini
  • ⅛ teaspoon sea salt

Salad

  • Spinach
  • Autumn Glory® apple slices
  • Crispy chickpeas
  • Red onion
  • Dried cherries
  • Quinoa
  • Feta or vegan feta cheese (optional)

Directions

  1. Blend all dressing ingredients, then set aside.
  2. Combine the remaining ingredients in a large salad bowl and toss. For presentation purposes, you may want to dip apple slices in a lemon juice and water mixture before adding them to the salad to retain freshness.
  3. When ready to eat, drizzle with dressing and enjoy!
