Autumn Glory Power Snack Plate

If you’re looking for a balanced, nourishing meal that goes beyond the usual routine, this savory apple breakfast plate delivers. Warm, lightly caramelized apples are paired with a soft egg, creamy avocado, and fresh toppings for a mix of textures and flavors. With a combination of protein, healthy fats, and natural sweetness, this dish works perfectly for breakfast, brunch, or even a light lunch. Simple to prepare and visually appealing, it’s an easy way to elevate everyday ingredients.

Ingredients

  • 1 Organic Autumn Glory Apple®
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 pinch flaky sea salt
  • 1 large egg
  • 2 radishes, halved
  • 1/2 avocado, pitted and peeled
  • 2 tablespoons feta cheese
  • 1 tablespoon pesto sauce
  • 1 small handful of mixed nuts (we used almonds, walnuts, and Brazil nuts)
  • 1/2 naan bread, sliced into triangles

Directions:

  • Peel an Autumn Glory apple and cut it into wedges, discarding the core.
  • Add apple slices to a bowl with olive oil, lemon juice, and a pinch of flaky sea salt. Toss until well coated and set aside for 5 minutes.
  • Meanwhile, bring a pot of water to a boil, with just enough water to cover an egg.
  • Once boiling, add a large egg and boil for 7 minutes.
  • After 7 minutes, transfer the egg to an ice bath until ready to serve.
  • Once the apple has marinated for at least 5 minutes, heat a pan over medium heat.
  • Add apple and liquids to the pan. Let cook on each side until the outside is slightly browned but the inside is still slightly crunchy. (This should take about 5-7 minutes.)
  • When the apple is ready, transfer it to a plate and set it aside while toasting the naan triangles.
  • Use the same pan you used for your apples to toast your naan, flipping once. It should be warm and slightly browned when finished.
  • Now you're ready to assemble!
  • Add a halved avocado to the plate, and top with feta cheese and pesto sauce.
  • Serve with cooked apples, radish halves, mixed nuts, 7 7-minute egg, and toasted naan.
