These apple cupcakes are made with Autumn Glory® apples and topped with vanilla buttercream ghost frosting.
Directions
Cupcakes:
- Preheat the oven to 350° F.
- Line two standard muffin tins with paper liners.
- Whisk together melted butter and sugar in a large bowl. Add vanilla, oat milk, and yogurt until combined.
- Once the wet ingredients are combined, add flour, spices, baking powder, and salt. Using a fork, gently mix the dry ingredients until a few lumps remain.
- Gently fold in the diced apples.
- Fill the cupcake liners ¾ full with batter.
- Bake for 22-25 minutes.
- Cool in the pans for about 5 minutes, then transfer to a wire rack to cool completely.
Buttercream:
- Beat the softened butter with a mixer on medium speed until fluffy and pale (about 2-3 minutes.)
- Gradually incorporate powdered sugar, vanilla, and one tablespoon of milk until combined.
- Add 1-2 additional tablespoons of milk if it's too thick, or powdered sugar if it's too thin, as needed to achieve a pipeable consistency.
Assembling:
- Using a large round tip, pipe vanilla buttercream in the center of each cupcake, leaving a 1-inch border around the edges. Pipe to about 1½- 2 inches tall.
- Shape into ghosts using an offset spatula warmed under hot water and dried. Wipe the spatula clean and rewarm it in between each smoothing motion.
- Add eyes and a mouth to each ghost using black writing icing with a small round tip.
- Finish by piping small arms with the remaining buttercream using a small round tip.
- Serve.
- ENJOY!
