Get all the cozy fall feels in just 10 minutes with this vegan stovetop apple crisp. Topped with lightly toasted granola for the perfect finishing touch!
Ingredients
- 3 teaspoons coconut oil, divided
- ½ cup granola
- 2 Autumn Glory® apples, chopped
- 2 tablespoons dried cranberries
- 1 teaspoon pure maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon fresh lemon juice
- Pinch of sea salt
- Vegan vanilla ice cream for serving (optional)
Directions
- Make the topping: Heat a sauté pan over medium heat. Add 1 teaspoon of the coconut oil and the granola. Cook, stirring occasionally, for 2-3 minutes until lightly toasted. Transfer to a small bowl and set aside.
- Prepare the filling: In the same pan, add the remaining coconut oil, apples, cranberries, maple syrup, cinnamon, lemon juice, and salt. Cook, stirring occasionally, for 5-8 minutes or until the apples soften.
- Divide the apple mixture between two bowls and top each with the warmed granola. Feel free to serve with a scoop of vegan ice cream!
