10 Minute Stovetop Apple Crisp

Apple crisp is a classic comfort dessert, and this quick version makes it easier than ever to enjoy. Tender apples are sautéed with warm spices and natural sweetness, then topped with toasted granola for a simple, crunchy finish. Ingredients

  • 3 teaspoons coconut oil, divided
  • ½ cup granola
  • 2 Autumn Glory® apples, chopped
  • 2 tablespoons dried cranberries
  • 1 teaspoon pure maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon fresh lemon juice
  • Pinch of sea salt
  • Vegan vanilla ice cream for serving (optional)

Directions

  1. Make the topping: Heat a sauté pan over medium heat. Add 1 teaspoon of the coconut oil and the granola. Cook, stirring occasionally, for 2-3 minutes until lightly toasted. Transfer to a small bowl and set aside.
  2. Prepare the filling: In the same pan, add the remaining coconut oil, apples, cranberries, maple syrup, cinnamon, lemon juice, and salt. Cook, stirring occasionally, for 5-8 minutes or until the apples soften.
  3. Divide the apple mixture between two bowls and top each with the warmed granola. Feel free to serve with a scoop of vegan ice cream!
