Ingredients
- 1 stick of butter, softened
- 1 ½ cups granulated sugar
- ⅓ cup vegetable oil
- ¼ cup lemon curd
- 1 egg
- zest from 2 lemons
- 1 tablespoon vanilla bean paste
- 1 cup almond milk
- 2 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon sea salt
- ½ cup Rainier cherries, pitted & diced
- Pre-made lemon buttercream frosting
Directions
- Preheat the oven to 350°F.
- Cream together the butter, granulated sugar, vegetable oil, lemon curd, egg, and lemon zest.
- Once that reaches a creamy consistency, stir in the vanilla bean paste and almond milk.
- In a separate bowl, mix together all of the dry ingredients.
- Then stir the dry ingredients into the wet mixture.
- Once the batter is well combined, stir in the diced cherries and transfer it to a parchment-lined 8x12 pan.
- Bake for 50 minutes, or until the cake is set and a knife comes out clean.
- Let cool for at least 30 minutes before adding the lemon buttercream frosting.
- Cut into slices and adorn with more halved Rainier cherries.
