Rainier Cherry Lemon Cake

Ingredients 

  • 1 stick of butter, softened
  • 1 ½ cups granulated sugar
  • ⅓  cup vegetable oil
  • ¼ cup lemon curd
  • 1 egg
  • zest from 2 lemons
  • 1 tablespoon vanilla bean paste
  • 1 cup almond milk
  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt
  • ½ cup Rainier cherries, pitted & diced
  • Pre-made lemon buttercream frosting 

Directions 

  1. Preheat the oven to 350°F.
  2. Cream together the butter, granulated sugar, vegetable oil, lemon curd, egg, and lemon zest.
  3. Once that reaches a creamy consistency, stir in the vanilla bean paste and almond milk.
  4. In a separate bowl, mix together all of the dry ingredients.
  5. Then stir the dry ingredients into the wet mixture.
  6. Once the batter is well combined, stir in the diced cherries and transfer it to a parchment-lined 8x12 pan.
  7. Bake for 50 minutes, or until the cake is set and a knife comes out clean.
  8. Let cool for at least 30 minutes before adding the lemon buttercream frosting.
  9. Cut into slices and adorn with more halved Rainier cherries.
