Eating a healthy breakfast is an important part of starting your day. Including apples ensures you get an added fiber boost, which takes longer to burn, giving you long-term energy. In these darkest days of the year, we are looking to add a little color to our breakfast. Dragon fruit and Honeycrisp apples combine, and voila! We have a colorful and tasty topping for our yogurt bowls! We like using high-protein yogurt like Greek or Icelandic recipes.
Note: We like using the dragon fruit (also known as pitaya) smoothie packs that are puréed and frozen.
Ingredients
- 1 Organic Honeycrisp apple, diced
- 2 ounces of dragon fruit purée
- 1 tablespoons water
- ⅛ teaspoon ground ginger
- 24 ounces plain high-protein yogurt
- ¼ cup crunchy granola
- Drizzle of honey
Directions
In a medium saucepan over medium heat, combine the apples, dragon fruit purée, water, and ground ginger. Stir frequently for about 5 minutes until the apples are softened.
Assemble your yogurt bowl: 8oz of plain yogurt, a large spoonful of the apple mixture, a drizzle of honey, and some crunchy granola.
