Cosmic Crisp Cheesecake Crumble

This Cosmic Crisp® Cheesecake Crumble is the perfect balance of creamy, cozy, and crisp. A buttery graham crust holds a smooth cheesecake filling, topped with warm cinnamon apples and a golden oat crumble. Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • 4 Tbsp sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 8 Tbsp butter, melted 

Filling 

  • 2 blocks of cream cheese, softened
  • ½ cup Greek yogurt
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp lemon juice 

Apples 

  • 4 Tbsp butter
  • 3 Cosmic Crisp® apples, diced
  • ⅓ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 Tbsp flour 

Crumble 

  • 4 Tbsp butter, melted
  • ½ cup flour
  • ½ cup brown sugar
  • ¼ cup oats
  • ¼ tsp salt
  • ¼ tsp cinnamon 

Creamy baked cheesecake layered with sweet-tart Cosmic Crisp® apples and finished with a crisp brown sugar crumble topping, sliced and ready to serve.

Directions 

  1. Preheat your oven to 350°F. Oil a 10-inch springform pan.
  2. In a medium bowl, add all your dry crust ingredients and mix until well combined. Then add the melted butter and mix until you achieve a sandy consistency.
  3. Press the crust into the pan and bake for 10 minutes. Allow it to cool.
  4. In a medium skillet, add in your diced apples, butter, brown sugar, and vanilla. Once it starts to bubble, add the flour and remove from the heat when the mixture has thickened. Allow it to cool.
  5. In a separate bowl, mix all the crumble ingredients until well combined and clumpy.
  6. In a mixing bowl, beat the cream cheese and sugar until smooth.
  7. Add in the Greek yogurt, vanilla, and lemon juice. Once all ingredients are combined, add the eggs one at a time, allowing each to be fully incorporated before adding the next.
  8. Pour the cream cheese filling over the baked crust, then add the apples, and finish with the crumble mixture.
  9. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the cheesecake to chill for 4 hours before serving.
  11. Serve.
