Ingredients
- 4 organic Cosmic Crips® apples, diced
- 15 tablespoons of unsalted butter, softened
- 1 ¼ cup brown sugar
- ¾ cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1¼ cup all-purpose flour
- 1 ¾ cup rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 ½ teaspoon cornstarch
- ½ teaspoon ground nutmeg

Directions
- Add 14 tablespoons of butter, 1 cup brown sugar, and ½ cup granulated sugar in a mixing bowl and beat until light and fluffy.
- Add in eggs and vanilla extract and mix until smooth.
- Add flour, oats, baking powder, cinnamon, and salt. Mix until evenly combined.
- Grease two muffin tins, scoop the dough till the tins are about halfway full, and press them flat.
- Preheat your oven to 350°F and bake the cookies for about 18 to 20 minutes.
- While your cookies bake, cook the apples in 2 tablespoons of butter until soft.
- Add the remaining sugars, cornstarch, nutmeg, and cinnamon, and cook them until they are caramelized. Set aside.
- When your cookies are done baking, press the center of each cookie with a shot glass, creating a pocket for the apples to fit into.
- Fill each cookie with your apple concoction and drizzle with caramel and/or put whipped cream.
- Serve.
