Cosmic Crisp Cookie Cups

These apple oatmeal cookie cups are a soft, spiced dessert filled with caramelized Cosmic Crisp® apples and finished with a drizzle of caramel. The oatmeal cookie base bakes up tender with warm cinnamon and nutmeg, while the apple filling adds a rich, caramelized sweetness. Shaped into individual cookie cups, this recipe delivers a perfect balance of texture and flavor in every bite. Easy to make and great for serving, these cookie cups are a fun twist on classic apple desserts.

Ingredients

  • 4 organic Cosmic Crips® apples, diced
  • 15 tablespoons of unsalted butter, softened
  • 1 ¼ cup brown sugar
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1¼ cup all-purpose flour
  • 1 ¾ cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ½ teaspoon cornstarch
  • ½ teaspoon ground nutmeg
  • caramel

Directions

  1. Add 14 tablespoons of butter, 1 cup brown sugar, and ½ cup granulated sugar in a mixing bowl and beat until light and fluffy.
  2. Add in eggs and vanilla extract and mix until smooth.
  3. Add flour, oats, baking powder, cinnamon, and salt. Mix until evenly combined.
  4. Grease two muffin tins, scoop the dough till the tins are about halfway full, and press them flat.
  5. Preheat your oven to 350°F and bake the cookies for about 18 to 20 minutes.
  6. While your cookies bake, cook the apples in 2 tablespoons of butter until soft.
  7. Add the remaining sugars, cornstarch, nutmeg, and cinnamon, and cook them until they are caramelized. Set aside.
  8. When your cookies are done baking, press the center of each cookie with a shot glass, creating a pocket for the apples to fit into.
  9. Fill each cookie with your apple concoction and drizzle with caramel and/or put whipped cream.
  10. Serve.
