Chicken and Apple Sheet Pan Meal

There's no better way to feed a crowd without the hassle than with a sheet pan meal! This chicken and apple sheet pan dinner is the perfect cozy and simple recipe. Autumn Glory apple paired with chicken thighs, onion, fennel, and fresh thyme for a flavorful oven-baked meal that still keeps the holiday feel.

Ingredients

  • 4-6 chicken thighs
  • 4 Autumn Glory® apples
  • 1 sliced onion
  • 1 sliced fennel bulb
  • 2 tablespoons fresh thyme
  • 1 tablespoon avocado or olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper

Directions

  1. Preheat oven to 425°F
  2. Add apples, onion, fennel, thyme, oil, ½ salt, and ½ pepper to a sheet pan and toss to combine.
  3. Season chicken thighs on each side with remaining salt and pepper.
  4. Nestle chicken into the apples and vegetables and then bake for 25-30 minutes until chicken is cooked through and golden brown.
  5. Serve with a side salad or over wild rice.
