Ingredients
- 1 pound fresh Superfresh Growers Dark Sweet cherries
- 1 lemon
- 2 tablespoons cherry liqueur
- 16 ounces mascarpone cheese
- 1 cup heavy cream
- â…“ cup granulated sugar
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package ladyfingers (24 pieces)
Directions
- Halve cherries and remove pits.
- In a saucepan, combine the cherries, granulated sugar, and the juice of one lemon.
- Let the sugar disintegrate and simmer the mixture until it is a juice consistency.
- Once the mixture has cooled, stir in the cherry liqueur and set it aside.
- In a large bowl, beat the heavy cream until soft peaks form.
- In another bowl, beat the mascarpone cheese with powdered sugar and vanilla extract until smooth.
- Gently fold the whipping cream into the mascarpone mixture. Set aside.
- Dip the ladyfingers in the cherry juice mixture (briefly), then set the first layer in a clear dish.
- Spread the mascarpone mixture evenly over the ladyfingers, and then layer on the cherry compote.
- Repeat this step two more times, ending with the cherry compote as the final layer.
- Refrigerate for at least four hours.
- Garnish with additional fresh cherries if desired
- Serve.
