Cherry Mascarpone Tiramisu

This cherry tiramisu is a fresh, no-bake dessert made with layers of mascarpone cream, soaked ladyfingers, and sweet cherry compote. Ingredients

  • 1 pound fresh Superfresh Growers Dark Sweet cherries
  • 1 lemon
  • 2 tablespoons cherry liqueur
  • 16 ounces mascarpone cheese
  • 1 cup heavy cream
  • â…“ cup granulated sugar
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package ladyfingers (24 pieces)

Directions

  1. Halve cherries and remove pits.
  2. In a saucepan, combine the cherries, granulated sugar, and the juice of one lemon.
  3. Let the sugar disintegrate and simmer the mixture until it is a juice consistency.
  4. Once the mixture has cooled, stir in the cherry liqueur and set it aside.
  5. In a large bowl, beat the heavy cream until soft peaks form.
  6. In another bowl, beat the mascarpone cheese with powdered sugar and vanilla extract until smooth.
  7. Gently fold the whipping cream into the mascarpone mixture. Set aside.
  8. Dip the ladyfingers in the cherry juice mixture (briefly), then set the first layer in a clear dish.
  9. Spread the mascarpone mixture evenly over the ladyfingers, and then layer on the cherry compote.
  10. Repeat this step two more times, ending with the cherry compote as the final layer.
  11. Refrigerate for at least four hours.
  12. Garnish with additional fresh cherries if desired
  13. Serve.
