These sheet pan apple sausage sandwiches combine roasted vegetables, sliced apples, and sausage for a simple, well-rounded meal. As everything roasts together, the ingredients develop a soft texture with lightly crisp edges, creating a balanced base for the sandwich. A hearty sandwich with crisp cabbage and a creamy fig mustard sauce
Ingredients
- 1 Autumn Glory apple, cored, halved, and sliced
- 1 orange bell pepper, thinly sliced
- ½ a golden beet, peeled and cut into triangles
- Apple sausage, cut into angled slices
- 2 handfuls of mini medley potatoes
- 1 tablespoon olive oil
- Coarse sea salt
- Thinly sliced purple cabbage
- 4 pretzel buns (optional)
- Fresh thyme
Sauce
- ⅓ cup mayo
- 1 tablespoon spicy brown mustard
- 1 tablespoon fig jam
Directions
- Preheat oven to 425°F.
- After prepping and slicing, arrange Autumn Glory, bell pepper, beet, sausage, and potatoes on a baking sheet and toss everything with olive oil and sea salt.
- Roast the veggies on a sheet pan for 20 min. Then, add fresh thyme to the veggies and roast for another 5 min. Heat up the pretzel buns during the last 5 min.
- Mix together the sauce ingredients in a small bowl.
- *Assemble sandwiches with roasted sausage and veggies. Potatoes to be served on the side. Top the sandwich with purple cabbage and sauce. Enjoy!
* Roasted sausage and veggies can be enjoyed on their own rather than on a bun if desired.
