Blueberry Waffles

Vegan blueberry waffles are a bright and flavorful way to start your morning. Made with simple plant-based ingredients, these waffles are light, fluffy, and naturally vibrant in color. Fresh blueberries add bursts of sweetness throughout, creating a balanced and satisfying breakfast. Easy to make and perfect for customizing with your favorite toppings, this recipe is ideal for weekend brunch or a quick, nourishing start to your day.

Ingredients

  • 2 cups pancake/waffle mix of choice
  • ½ cup fresh Superfresh blueberries
  • 1 tablespoon blue butterfly pea flower powder
  • 2 tablespoons olive oil
  • 1 cup soy milk
  • 5.3 ounces blueberry coconut milk yogurt

Directions

  1. Mix all ingredients together to make the batter.
  2. Heat your waffle iron per instructions.
  3. Lightly spray the iron with cooking spray, then add enough batter to make waffles. For every few waffles, be sure to re-spray your waffle iron as necessary.
  4. Once cooked, stack up a couple of your waffles and sprinkle with additional blueberries and syrup, if desired.

Note: This recipe was created using Silk protein milk and So Delicious Coconutmilk Yogurt. These waffles are designed to be plant-based and vegan, but can be adjusted to include dairy.
